Broccoli and cheese

Here's a simple and delicious recipe for broccoli and cheese casserole:

Ingredients:

  • 4 cups fresh broccoli florets (or frozen, thawed)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cream or milk
  • 1/2 cup mayonnaise (optional for creaminess)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • Olive oil or butter for greasing the dish

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Blanch Broccoli: If using fresh broccoli, blanch it in boiling water for 2-3 minutes, then drain and cool in ice water to keep it bright green.

  3. Mix Ingredients: In a large mixing bowl, combine the broccoli, cooked rice, half of the cheese, cream or milk, mayonnaise (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.

  4. Transfer to Casserole Dish: Pour the mixture into a greased casserole dish. Spread it evenly.

  5. Add Toppings: Sprinkle the remaining cheese on top, and if desired, add breadcrumbs for extra crunch.

  6. Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and the top is golden.

  7. Serve: Allow it to cool for a few minutes before serving. Enjoy your cheesy broccoli goodness!

This casserole makes a great side dish or can be enjoyed as a main dish. You can also add cooked chicken or other veggies for extra flavor!
